Well as a matter of fact I had some tonight at a restaurant, with braised short ribs. It was a little al dente for me. Typically I love rissotto. MrP I believe you would really like it, it should be mushy but have a soft bite that is creamy and rich. Good Stuff.

It is a FAT rice, SHORT grain, not long grain and skinny....
Arborio rice. (risotto)
I have a great, (if you have 30 minutes to stand and stir, stir, and stir) easy recipe for risotto, if anyone wants one, I will post in the food section in a bit....
you will need a good, to taste, white wine.
butter and olive oil
Arborio rice
Parmigiano Reggiano
or Pecorino Romano Cheese to taste
onion
garlic
and chicken stock or chicken broth
salt and pepper
italian parsley, optional
(Optional Risottos- mushroom, carrot, broccoli, or groundbeef with tomatoes & basil etc.)

Simple.. Any wine you would drink is good enough.
If you're like me, and you don't drink wine, just don't skimp on the cost, and you should end up with something good. :)
