I've been on-line looking for a recipe for a good, yet simple, chicken salad sandwich.

I've found some with grapes, with almonds, plum preserves, anchovies....
none of which appeals.

Can anybody help?

That's cause you forgot water chestnuts, green onion, celery, a bit of mustard, dried cranberries, and pepper.

Ugh. The request was for chicken *salad*. It's assumed chicken would be the main ingredient, and therefore not need to be mentioned. "Salad", however, implies a mix of additional ingredients - if I get rid of the "rest" of the "shit", you're left with a friggen chicken.

My mom makes a great Chickken Salad with Celery and Mayo. You can also get a Oriental Chicken Salad at Costco with Oriental Dressing and it's out of this world.

Keep the peanuts...the rest sounds...errr interesting.

You chop the peanuts, and put them in right before you line a wrap with lettuce, and drop the chicken in it. :D

4 cups diced poached chicken
1 stalk celery, cut into 1/4-inch dice
4 scallions, trimmed and thinly sliced or 1/4 cup sweet onion cut into 1/4-inch dice
1 1/2 teaspoons finely chopped fresh tarragon or fresh dill
2 tablespoons finely chopped parsley
1 cup prepared or homemade mayonnaise
2 teaspoons strained freshly squeezed lemon juice
1 teaspoon Dijon mustard
2 teaspoons kosher salt
Freshly ground black pepper

Curried Chicken Salad Sandwich with Almonds and Raisins Recipe

3 tablespoons extra-virgin olive oil
4 boneless, skinless chicken breasts (about 1 1/2 pounds total)
Salt and freshly ground black pepper
1/2 cup mayonnaise, plus extra, if you like, for spreading
1 teaspoon curry powder
1/2 lemon, juiced
1/4 cup chopped, blanched almonds, toasted
1/4 cup raisins
A handful fresh basil leaves, torn
8 slices good-quality, dense white bread such as Tuscan

Preheat the oven to 400 degrees F.
Heat the oil in a large ovenproof skillet over medium-high heat until smoking. Sprinkle the chicken breasts on both sides with salt and pepper. Put them in the pan in a single layer, and brown them 2 minutes on each side. Put the skillet in the oven and roast until the chicken is just cooked through, about 15 minutes. Remove from the oven and cool.

Chop the cooled chicken and put it into a large bowl. Add the rest of the ingredients and toss. Season with salt and pepper.

Spread 4 bread slices with mayonnaise, if you like, and spread with the curried chicken. Top with another slice of bread and serve.

bogs are good, but if you are lazy, look for "Craisens" in the produce section, next to the raisens.....

Craisins are ok, but they're usually infused with another flavor...

Make the usual chicken, onion,celery and mayo. Add a sprinkle of curry. Pretty darn good.

Well plans were changed so I didn't get to the grocery before attempting this.
So I made it like Said1 suggested, onion, mayo; but I added some of the Hidden Valley Ranch dressing mix to it (the seasoning). Not too bad in a pinch.
