High up in the air it is really really cold. The engines of the planes, commercial planes by the way, are very very hot. What comes out of the exhaust is extremely hot air which causes condensation thereby creating a trail. On clear days this trail is visible. On cloudy days it's not. But it's always there.

That's your science lesson for the day.
