    Default Yup.. Pie Eyed..

    I'm a pie sorta Guy....

    Just thinking about my wife's pie makes my mouth water.. Sure, I've tried many a pie, luscious tart ones, hot sweet ones, juicy and warm ones and oh those spicy sizzling ones.. and the toppings, smooth warm melted chocolate, a saucy raspberry warmed and tasty or cream thick and melting on your tongue..

    But...nothing matches the presentation and consumption of my wifes..

    I do love a good Pumkin pie...Pecan too (with whipped cream or Icecream). But my favorite is coconut cream.

    Lumpy...this is where you lost me. See...if I'm in the mood for that kind of satisfaction...I usually go for eclairs with creme filling (not pie).

    Not a pie...but definately worth a big smooch

    10-Minute Dessert: Chocolate Butterscotch Cheesecake



    Ingredients:

    1 Cheesecake
    For the Butterscotch Sauce:
    4 Tablespoons unsalted butter (1/2 stick)
    1/2 Cup brown sugar
    1/2 Cup heavy cream
    1 Teaspoon Kosher salt
    1 Teaspoon vanilla extract

    For the Chocolate Sauce:

    1 Cup heavy cream
    1 Cup semi-sweet chocolate chips
    Pinch of Kosher salt
    3/4 Cup chopped pecans

    Directions:

    - First, make the butterscotch sauce: Melt the butter in a medium saucepan over medium heat.
    - Add the brown sugar,
    and salt, and whisk until combined.
    - Bring to a boil, then lower heat slightly and let cook for about five minutes or until thickened.
    - Remove from heat and stir in vanilla.
    - Let cool while you make the chocolate sauce.
    - Then, make the sauce: Place the chocolate chips in a large bowl.
    - Heat the heavy cream over medium heat just until bubbles form on the outside.
    - Remove from the heat and pour the heated cream over the chips.
    - Add the salt and whisk together until all the chocolate has melted and the sauce is smooth. Let cool slightly before using.
    - To assemble cheesecake: Sprinkle half the pecans over the cheesecake. Drizzle generously with the butterscotch sauce and the chocolate sauce. Sprinkle on the rest of the pecans.

    ALMOST-BETTER-THEN-SEX PIE

    Ingredients:

    Flour
    butter
    Cool Whip
    Milk
    Cream cheese
    Powdered sugar
    Vanilla pudding and chocolate pudding
    Nuts

    Crust: Combine 1/2 cup chopped nuts with 1 cup of flour and 1 stick of butter. Mix well. Press into ungreased 9 x 13 inch pan. Bake for 20 minutes at 350 degrees. Let cool.

    First layer: Combine 4 ounces Cool Whip, 8 ounces cream cheese, and 1 cup powdered sugar. Blend well and spread over crust.

    Second layer: Combine 1 small box of instant chocolate pudding, 1 small box of instant vanilla pudding, and 3 cups of milk. Blend and spread over first layer.

    Third layer: Spread another 4 ounces Cool Whip over second layer. Sprinkle nuts or chocolate curls on top. Refrigerate.
