Easy Bean/Cheese burritos - or Chip dip
My go-to dip for things like "I'm home alone and feeling sorry for myself" or "watching Seattle make the WORST call in the history of the SB to PASS from the 2 yard line".
I use:
Can of Re-Fried beans.
Shredded Cheddar cheese.
Salsa.
Hot sausce
Get a quart-size pyrex cup. Micro the beans (cover with paper towel) for about 3 mins - AFTER...and this is important AFTER you remove the beans from their can.
When it comes out, stir with wooden spoon - but NOT right under you face; sometimes the beans will pop and shoot hot beans all over your face (sounds sexy).
Stir in about 1.5 cups of shredded cheese - and keep at it until the cheese melts.
Stir in about a cup or so of your favourite salsa.
Now - addin a bunch of hot sauce - to taste. Dip your chips in that bad-boy, OR Spread out on a tortilla (I heat my tortillas in a med-high iron skillet, over a pinch of oil oil until a little crispy).
Sometimes I add-in taco-seasoned ground beef. That's good, too.
