    Candied Yams (Sweet Potatoes)

    Boil sweet potatoes till near tender, with peeling on.

    let cool and peel and cut in to 1-2 inch cubes

    butter the bottom of a low side baking dish.

    spread the yams in the pan to an even depth.

    Cover them with about a cup of light or dark brown sugar. (I prefer the dark brown)

    Then spinkle about a cup of walnuts over them.

    Take a stick of butter cut in to pieces and sprinkle that over them.

    Then grate a full orange peel over them and add 1/2 cup of the orange juice.

    Bake for about 45 minutes.

    They are the Yummiest!

    Some like to sprinkle a half bag of mini marshmellows on top of them too, broiling on top for about 3 minutes, making them brown at the end of the cooking process.

    Are you serving yams or sweet potatoes? You called them Sweet taters then yams? Interchanging names on purpose? Did you know the two aren't even distantly related? Only related in how Americans (and others?) name one the other, and vice-versa.

    I use sweet potatoes, not yams..... because the whole dish is so fattening, the sweet potatoe at least has some nutritional redeeming value!!! the yam does not.

    but either can be used.

    and NOOOOOOOO, I did not know that they weren't even related?

    Corn bread dressing or stuffing.

    5-6 cups of cornbread broken up. (Better to make your own in a black iron skillet, bought kind has sugar in it usually and that just doesn't work) 5-6 cups is an 8- 9 inch skillet.

    5-6 cups of white bread, dried out and broken up in to pieces

    put in to a big bowl, awaiting the rest of the mixture.

    In a skillet saute till soft (I usually use a light olive oil, couple of tablespoons)

    1 cup of diced celery
    1/2 cup of diced onion
    1/2 cup of diced green pepper
    1 cup of chopped walnuts

    Add this mixture to the bread and mix in evenly.

    Add

    1/2-1 teaspoon of salt
    1/2 teaspoon of pepper
    1 1/2 teaspoon of Poultry Seasoning
    add
    2 Beaten eggs
    and
    1 1/2 cups of turkey broth or chicken broth (I boil the neck and giblets with onion and carrots and celery to make my own broth, but chicken broth out of the can will do)

    mix all together well.

    Then take 1/2 cup of butter cut in to pieces and add in to the mixture evenly.

    Stuff the bird or bake in a deep dish for about an hour.

    DELICIOUS!
