My new favorite spaghetti sauce, Bellino, is mighty good. But I want to make my own. I have tried making my own sauce from canned tomatoes, but I can taste the "can" in it.

I only bother to make my own if I'm making lasagna otherwise I don't see the point. Not that I don't add some brown sugar usually or some hot sauce or balsamic vinegar on occasion.

I've got a recipe, but it's not written down... Let me think about it, I want to be somewhat accurate...
Just to give you an idea, my wife is not fond of spaghetti sauce, but she can't get enough of mine...

My mother was not a great cook but her sauce recipe was wonderful. She was shown by a fellow Navy wife when she and my dad lived in Norfolk. That lady was the daughter of an Italian immigrant. So the recipe goes like this.
Brown app. 1 pound of 70/30 ground beef with a small chopped onion and a clove or two of minced garlic. In a large pot put a pound of peeled plum tomatoes. ( I have no problem with canned or fresh ). Add 4 small cans of tomato paste. Measure out the same amount of liquid. I usually use about two and a half cans water and a half red wine. I can always add more liquid later. To this I add salt, pepper, oregano, basil and parsley. Vary the amounts to get the flavor you like. Mom always crushed the tomatoes by hand but I put the whole mess in the blender and just pulse it a few times. Drain the ground beef, onion and garlic and add it to the tomato mix. Then simmer on low for about an hour. Then taste it. Depending on the tomatoes you may need to add a little sugar to sweeten but only do so a very little at a time to your taste. Then just simmer for a few hours and stir periodically. You can use a slow cooker. Variations include adding green pepper, mushrooms, etc. Leave out the meat for a sauce for chicken parm. Add sausage for a great lasagna sauce. I generally make a large pot and freeze seperate containers for quick meals.

My Mom was a great cook and had a great sauce, she gave my wife the recipe but down here in the south you can't get the same ingredients as you could in NJ and what a difference that makes. Jim's wife makes her sauce with tomato paste from Italy and yes you can taste the difference. I know there are many different types of Sauce ( Gravy) but when it is cooked right they all taste good.

I hear you on the 'ingredients'! While I love Sedona, I hate the limited grocery availability and high costs.
I feel guilty about calling my mom a 'less than great cook.' She had some things she really rocked at making, her spaghetti sauce was one of them. She just cooked meat and veggies a bit too long. LOL! It seems to have been an 'Irish thing.'

My Mom was a great cook, although she loves red meat ( London Broil was her all time favorite during grilling season ) but she would experiment and make anything taste good, in her later years she was still a great cook but didn't do the experimenting as much, but yes she could make dog taste good if she needed to.

I have never been there but have heard it is fantastic, but let me make it clear what I meant, My Mom had told my wife what brands to get and the wife couldn't get the same brand down here, my wife's Gravy is decent but not like Mom's and that is what I chalk it up to, the different brands.
But as for the Farmers Market folks have told me the fresh seafood they have there is fantastic, I can't get fresh seafood up here at all, I go to the Gwinett farmers market from time to time but that is really just a Chinese restaurant whole sale place, they have everything you want but nothing is a real good quality, it is more geared to the buffets, may not be the best food but you can eat all you want.

I knew what you meant. They have brands from all over and they're undergoing a HUGE expansion. It will be the largest grocery store in the country when they're done I hear. But you're probably right that they wouldn't have that brand but I wouldn't be surprised if they had something similar. Give me a brand name and I'll check it out for you.

Dang that is rather impressive to say the least, like I said I have heard of it many times and we use to deliver there all the time ( usually potatoes from Idaho ) but I myself have never been there. Now as for a brand I honestly couldn't tell you other than I do remember my Mom using Hunt's tomato paste, so I am guessing Hunt's is the brand, but I could be all wrong, I will have to check with the wife.

Basically, this is what I do except I use a pound of lean ground beef and leave out the stock. I bottle my own tomatoes so there is no "can" taste.
I happen to catch the show on PBS when he did this and was pleased to know I did almost the same method and recipe.

My mother was a good cook, she just made horrible spag sauce - Lowery's package mix. It was what I grew up on until I was on my own and made my own.
