Do you really think I don't know good steak? From Chicago? Really! When I go to a steak house or cook a filet I'm right with you. However, I've no problem with using sirloin in recipes from chili to beans to stew. The last would be chuck or even sirloin-as in cook long. Sirloin actually can cook long, lean though it may be.

Sirloin that's marinated or even filet make excellent stir fry.

I'm just not addicted to coals and hunks of meat with a fork.
